Watermelon jelly recipe
Ingredients (for 6 persons):
750 gr. watermelon, purified from peels and seeds
85 gr. sugar
15g. lime juice
For the garnish:
watermelon cut into slices
nectarine cut into slices
zest of lime
You start by making a syrup by boiling water and sugar together until the sugar is melted and cool it. Soak gelatine in water until it softens and becomes pliable. Pour the syrup into the blender, along with watermelon and grind. Strain the mixture into the strainer.
Place the mixture in a saucepan and heat over low heat, to the point just before boiling. Remove it from the heat, add the gelatin (after you wrung your hand well) and the juice of lime, homogenise the mixture and strain in chinois or other strainer. Cooled to about 30 ° C, we share per 150g. in utensils of your choice and place them in the refrigerator as needed to thicken the gel.
Mix all the ingredients for the garnish and serve with jelly.
