I can do with or without the lid, id prefer the lid so its fully cooked quicker and evenly. So here's my idea for my recipe, ya'll let me know what you think: \- gonna toss sliced baby potatoes and chopped carrots in olive oil, salt, pepper, rosemary, and butter, scatter them on bottom of butter bottomed dutch oven \- rub chicken in butter til im happy, cover in spices listed above and let her sit a minute to absorb everything \- cook in preheated 300F oven for an hour?
